Tuna And Macaroni Mornay - cooking recipe

Ingredients
    9 oz macaroni
    7 tbsp butter
    1/4 cup all-purpose flour
    2 1/2 cups milk
    3 oz Cheddar cheese, grated
    9 oz asparagus, cut into 3/4 inch pieces, blanched
    1 pinch grated nutmeg
    3 (6 oz) cans tuna in spring water, drained, flaked
    None None green salad, to serve
Preparation
    Preheat broiler. Cook macaroni in boiling, salted water until al dente. Drain.
    Meanwhile, for the mornay sauce, melt 4 1/2 tbsp butter in a saucepan over medium heat. Stir in flour and cook, stirring, for 2 mins. Stir in milk until smooth. Increase heat and stir until sauce boils and thickens. Stir in 1/3 cup cheese and asparagus. Add nutmeg and season to taste.
    Add pasta, tuna and remaining butter to sauce and toss to combine. Transfer to a baking dish and sprinkle with remaining cheese. Broil for 5 mins, or until cheese is melted and browned. Serve with salad.
