Sautéed Peppers And Zucchini - cooking recipe

Ingredients
    2 tbsp olive oil
    2 tbsp minced shallot
    2 None large bell peppers, cut into strips
    12 oz zucchini, cut into strips
    2 tsp minced garlic
    1 tbsp balsamic vinegar
    2 tsp fresh oregano leaves, chopped, plus extra sprigs to garnish
    2 tsp fresh parsley leaves, chopped
Preparation
    In a large frying pan, heat olive oil over medium heat. Saute shallot, peppers and zucchini until tender, about 3 mins. Add garlic, vinegar and herbs. Season and toss to combine. Arrange vegetables on a serving platter and garnish with reserved oregano.
