Fresh Pasta Dough - cooking recipe

Ingredients
    1 3/4 cups all-purpose flour
    2 None eggs
    2 tbsp olive oil
    1 oz Parmesan cheese, grated
    1/4 cup fresh basil, parsley or chives, chopped
Preparation
    Combine flour and 1/2 tsp salt in a food processor. With motor running, add eggs, 1 at a time. Process until dough is elastic and firm, about 2 mins. Turn dough out onto a floured surface and knead lightly. Wrap in plastic wrap and let rest for 30 mins.
    On a lightly floured work surface, cut dough in 1/2 then roll out each section to 1/8 inch thick. Dust with flour then fold in 1/2 and cut into 1/4 inch wide strips.
    Cook pasta in boiling, salted water for about 2-3 mins, until al dente. Drain and toss with olive oil, Parmesan and herbs. Serve.
