Zucchini And Peanut Burgers - cooking recipe
Ingredients

2 None zucchini, grated, excess moisture squeezed out
2/3 cup roasted peanuts, chopped finely
2 None large eggs, beaten lightly
2 tbsp fresh parsley leaves, finely chopped
3.5 oz cooked brown rice
1/2 cup stale breadcrumbs
None None flour, to dredge
2 tbsp vegetable oil
Preparation

In a large bowl, combine zucchini, peanuts, eggs, parsley, rice and breadcrumbs. Shape into 6 patties.
Toss patties in flour, shaking off excess. Heat oil in a large frying pan over medium heat. Cook patties for 3-4 mins, or until browned.
