Rambutans And Pistachios In Caramel - cooking recipe

Ingredients
    1/2 cup suar
    1 lb rambutans, peeled and stones removed
    2/3 cup pistachio nuts, shelled
Preparation
    Place the sugar in a pan with 2/3 cup water and bring to a boil, stirring to dissolve the sugar. Reduce the heat and simmer for 10-12 mins until the mixture turns a rich caramel color. Remove from the heat before the mixture thickens. Add 1/4 cup of warm water and return to the heat. Swirl the pan until blended.
    Add rambutans and nuts and set aside to cool in the caramel. Chill the mixture for 30 mins. Serve in glasses.
