Red Wine Roasted Boneless Rib Roast - cooking recipe

Ingredients
    1 (7 lb) boneless beef rib roast
    1 tbsp chopped fresh rosemary, plus extra sprigs for garnish
    1 tbsp chopped fresh thyme, plus extra sprigs for garnish
    1 tbsp Dijon mustard
    2 tbsp vegetable oil
    4 cloves garlic, minced
    2 None small red onions, cut into wedges
    1 tbsp olive oil
    4 None shallots, minced
    2 cups dry red wine
    1/2 cup butter, cut into cubes, at room temperature
Preparation
    Preheat oven to 350\u00b0F.
    Season beef. Combine chopped herbs, mustard, vegetable oil and garlic then spread over beef. Place beef in a roasting pan and roast for 30 mins.
    Toss onion wedges in olive oil then add to roasting pan. Roast for another 1 hour 15 mins for medium-rare, or until cooked to your liking.
    Meanwhile, in a saucepan, combine shallots and wine. Bring to a boil then cook until reduced to 1/4 cup, about 7 mins. Reduce heat to low and whisk in butter, a few pieces at a time. Season. Stir in any pan juices before serving. Serve with beef and onions. Garnish with herb sprigs.
