Sausage And Corn Pilaf - cooking recipe

Ingredients
    2 tsp oil
    6 None lamb or other sausages
    1 large onion, thinly sliced
    1/2 tsp ground cumin
    1/2 tsp paprika
    1/2 tsp turmeric
    1 1/2 cups basmati rice
    3 cups chicken stock
    1 can (11 oz) whole kernel corn, drained
    1/4 cup currants
    None None Cilantro and prepared tzatziki, to serve
Preparation
    Heat the oil in a large saucepan on high heat. Cook the sausages for 8-10 mins, turning until browned and cooked through. Slice thinly. Transfer to a plate. Cover to keep warm.
    Saute the onion in the same pan for 5-6 mins until golden. Stir in the spices and cook, stirring for 1 min.
    Add the rice and cook, stirring for 30 seconds. Add the stock. Bring to a boil, stirring. Reduce the heat to low; simmer, covered, for 12-15 mins until the stock is absorbed.
    Fluff the pilaf with a fork and stir in the sausages, corn and currants. Top with cilantro and serve accompanied with tzatziki.
