Almond Cake - cooking recipe

6 None eggs, separated
3/4 cup sugar
8 oz almond meal
1 pinch ground cinnamon
1 None orange, zested
1/2 oz flaked almonds
None None powdered sugar or cocoa for dusting
Preparation

Beat the egg whites until stiff and refrigerate them. Beat the egg yolks and sugar until creamy. Stir in the almond meal, cinnamon and orange zest and carefully fold in the egg whites.
Preheat the oven to 325\u00b0F. Pour the batter into a greased 9 inch diameter cake pan, smooth batter and sprinkle with flaked almonds. Bake 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
Allow to cool in the pan for 10 minutes, then transfer to a cooling rack and allow to cool completely. Serve sprinkled with powdered sugar or cocoa.
