Shrimp And Mushroom Skewers With Aioli - cooking recipe

Ingredients
    3 tsp mustard
    3 cloves garlic, chopped
    1 medium egg yolk
    100 ml olive oil + 10 tbsp
    4 tbsp white wine vinegar
    1 tsp honey
    2 medium red onions
    12 slices baguette
    250 g button mushrooms
    12 large prawns, de-shelled
    100 g lettuce leaves
Preparation
    For the aioli, combine 2 tsp mustard, 2 garlic cloves and egg yolk in a food processor. Stream in 1/2 cup olive oil. Season then set aside.
    For the vinaigrette, whisk vinegar, 1 tsp mustard and honey. Gradually whisk in 1/4 cup oil then season. Add finely chopped onion.
    For the crostini, heat 1/4 cup oil in a large frying pan and toast baguette slices on both sides, with remaining garlic, for about 2 mins. Season and add 1/2 the chopped basil then set aside.
    Heat remaining oil, place mushrooms, prawns and onion onto skewers and saute on both sides for about 5 mins. Serve on a bed of lettuce, drizzled with vinaigrette and crostini and aioli on the side. Garnish with remaining basil.
