Tuna And Asparagus Macaroni Mornay - cooking recipe

Ingredients
    9 oz macaroni
    1/3 cup butter
    1/4 cup plain flour
    1/2 cup milk
    3 oz cheddar, grated
    1 bunch asparagus, cut into pieces, blanched
    None Pinch grated nutmeg
    3 x 5 oz cans tuna in spring water, drained, flaked
Preparation
    Cook pasta according to package instructions. Drain.
    In a saucepan, melt 3 tbsp butter over medium heat. Add flour and cook, stirring, 1 min. Stir in milk, increase heat and stir until sauce boils and thickens. Stir in 2/3 of the of cheese and the asparagus. Add nutmeg and season to taste.
    Preheat broiler to medium. Toss sauce with pasta, tuna and remaining butter. Pour into a 6-cup baking dish and sprinkle with remaining cheese and place under broiler 5 mins, until cheese is golden and melted.
