Veracruz Style Baked Fish - cooking recipe

Ingredients
    3 cloves garlic, peeled and chopped finely
    100 g onion, peeled and finely diced
    1 None green bell pepper, seeded and cut into thin strips
    1 tbsp oil
    1 can (850ml) chopped tomatoes
    2 None bay leaves
    1 tsp dried oregano
    50 g pitted green olives, chopped
    30 g capers
    4 None fish fillets (such as ling, about 150 g)
    20 g butter
    None None oregano
    None None hot jalapenos sliced for garnish
Preparation
    Heat oil in a frying pan, add garlic and onions and sweat until soft. Add tomatoes and bring to a boil. Add peppers and simmer for 2-3 mins, stirring. Add bay leaves and oregano and season to taste. Cover and simmer for 8-10 mins over medium heat. Add olives and capers and cook another 5-7 mins.
    Preheat oven to 400\u00b0F. Heat butter in a frying pan and saute fish fillets on each side for about 2 mins. Transfer to a greased ovenproof dish and pour sauce over top. Cover with foil and bake for about 30 mins. Remove from oven and serve garnished with jalapenos.
