Gluten Free Bread And Butter Pudding - cooking recipe

1 3/4 lbs gluten-free white bread, buttered, crusts removed
4 None eggs
1 cup milk
1 cup heavy cream
1/2 cup granulated sugar
1 tsp vanilla extract
None None Powdered sugar, to dust
None None Mixed berries, to serve
Preparation

Preheat the oven to 350\u00b0F. Grease a 2-quart baking dish.
Cut the bread into large cubes. Cover the bottom of the prepared pan with half of the bread, trimming to fit snugly.
Whisk the eggs, milk, cream, sugar and vanilla extract in a large bowl. Pour half over the bread, then top with the remaining bread and remaining egg mixture. Let stand for 10 mins.
Place the dish in a large roasting pan. Pour in enough hot water to come halfway up the sides of the dish.
Bake for 45-50 mins, until the custard is set. Dust with powdered sugar and serve with berries.
