Bacon, Vegetable And Lentil Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    1 (14 oz) package diced fresh vegetable soup mix
    2 cloves garlic, minced
    7 oz bacon, finely chopped
    7 oz dried red lentils
    4 cups chicken stock
    2 tbsp coarsely chopped fresh chives
    2 tbsp coarsely chopped fresh flat-leaf parsley leaves
    1 tbsp finely chopped fresh tarragon leaves
Preparation
    Heat oil in a large saucepan over high heat. Add soup mix, garlic and bacon. Cook, stirring, for 5 mins, or until vegetables soften. Add lentils and stock. Bring to a boil then reduce heat and simmer, stirring occasionally, for 15 mins, or until lentils are tender and soup has thickened. Season to taste.
    Serve soup sprinkled with herbs.
