Healthy Cottage Cheese Burgers - cooking recipe

Ingredients
    3/4 lb ground beef
    1/3 cup low-fat curd cheese
    1 None egg, lightly beaten
    1 None small onion, finely diced
    1 None red bell pepper, seeded and finely diced
    1/4 cup chopped fresh parsley
    2 tbsp dry breadcrumbs
    1 1/2 tbsp Dijon mustard
    1 tbsp vegetable oil
    1/4 cup light mayonnaise
    4 None multigrain bread rolls, split
    None None Lettuce leaves, tomato and cucumber slices, for serving
    None None Ketchup, for serving
Preparation
    Mix the ground beef, cottage cheese, egg, onion, bell pepper, parsley, breadcrumbs and 1 tbsp mustard in a bowl. Season with salt and pepper to taste, mix well and shape into 4 thin burgers.
    Heat the oil in a large skillet over medium-high heat. Add the burgers and cook for 2 mins per side. Reduce heat to medium and cook for another 4-5 mins per side for medium doneness.
    Mix the mayonnaise with the remaining 1/2 tbsp mustard. Spread evenly over the roll bottoms. Top with the lettuce, tomato and cucumber slices. Add a burger, some ketchup, then more lettuce, tomato and cucumber. Sandwich with the roll tops and serve.
