Spiced Spinach Pilaf With Chicken - cooking recipe

Ingredients
    1 tbsp oil
    1 None onion, chopped
    2 tsp ground coriander
    1 tsp ground cinnamon
    1 tsp ground cumin
    1 tsp chili flakes
    1/2 tsp turmeric
    4 oz basmati rice
    2 cups chicken stock
    14 oz can diced tomatoes
    1 lb boneless, skinless chicken thighs
    1/4 lb baby spinach leaves
Preparation
    For the pilaf, heat oil in a large saucepan on medium and saute onion 3-4 mins, until tender. Add coriander, cinnamon, cumin, chili flakes and turmeric. Cook 1 min, stirring, until fragrant. Add rice and cook, stirring, 1 min. Stir in chicken stock and tomatoes. Bring to a boil, then reduce heat and simmer, covered, 15 mins, or until rice is just tender. Remove from heat and cool 5 mins.
    Meanwhile, preheat grill on high. Brush chicken with oil and grill 4-5 mins on each side, until cooked through. Cut each piece in half.
    To finish, stir spinach into rice mixture. Season to taste and top with chicken to serve.
