Ingredients

3/4 cup sugar
1 oz fresh mint leaves, 5 leaves chopped for garnish
None None juice of 1 lemon
3 tbsp light rum
None None pineapple slices, to garnish
Preparation

To make the syrup, bring the sugar and 1 cup water to a boil in a saucepan, stirring until the sugar dissolves. Remove from the heat, stir in the whole mint leaves and cool completely. Pour the syrup through a sieve and discard the mint leaves.
Mix the syrup, lemon juice and rum together in a shallow container. Freeze for 3-4 hours, stirring every 30 mins with a fork. Divide between 4 glasses and decorate with the chopped mint and pineapple slices to serve.
