Poached Turkey With Tuna Mayonnaise - cooking recipe

Ingredients
    4 1/2 lb turkey breast, deboned, rolled
    1 None carrot, cut into chunks
    1 stalk celery, cut into chunks
    1 None onion, cut into quarters
    1 handful fresh parsley sprigs
    1 None small bay leaf
    None None Tuna Mayonnaise
    5 oz canned tuna in oil, drained
    4 None anchovies
    2 oz baby capers, drained
    2 cups mayonnaise
    None None lemon juice, to taste
    None None lemon zest, to garnish
    None None watercress, to garnish
Preparation
    In a large pot, combine turkey, carrot, celery, onion, parsley and bay leaf. Add enough water to just cover. Bring to a boil, cover and simmer for 30 mins. Remove from heat and let turkey cool in liquid, covered.
    Meanwhile, to make the tuna mayonnaise, combine tuna, anchovies, 1 oz capers and 2 tbsp cold turkey cooking liquid in a food processor. Puree until smooth. Mix with mayonnaise and lemon juice. Season.
    Thinly slice turkey and arrange on a serving platter. Spoon tuna mayonnaise over top and sprinkle with remaining capers and lemon zest. Garnish with watercress.
