Broccolini With Bacon And Eggs - cooking recipe

Ingredients
    1 1/2 lb broccolini, trimmed
    3 tbsp butter
    2 slices bacon, coarsely chopped
    2 thick slices ciabatta, cut into 1/3 inch pieces
    1 clove garlic, minced
    1 tbsp baby capers, rinsed
    1 tbsp fresh flat-leaf parsley leaves, finely chopped
    4 None soft-boiled eggs, quartered
Preparation
    Cook broccolini until tender. Drain.
    Meanwhile, melt butter in large frying pan. Cook bacon until crispy. Add bread and garlic. Cook, stirring, until bread is golden brown. Add capers and parsley and toss to combine.
    Divide broccolini between serving plates. Top with bacon mixture and eggs.
