Ingredients

4 None small half-baked baguettes
4 None shallots, peeled and finely diced
2 tbsp sunflower oil
6 tbsp tomato puree
1/3 cup vegetable stock
1 pinch chili powder
1 pinch dried thyme
1 pinch dried oregano
3 None mini salami sausages, sliced
1/2 lb canned corn, drained
1/2 lb mozzarella, grated
Preparation

Prepare the baguettes according to the package instructions. Heat the oil in a small pan and saute the shallots. Add the tomato puree, then pour in the stock and simmer for 10 mins. Add the chili powder, dried thyme and oregano and season to taste.
Preheat the oven to 400\u00b0F. Cut the baguettes in half lengthways and spread them evenly with the sauce, chopped salami and corn. Sprinkle with cheese and bake for about 6 mins.
