Baked Orange And Passionfruit Cheesecake - cooking recipe

Ingredients
    13 oz graham crackers, broken
    1 cup butter, melted
    1 lb cream cheese, chopped, softened
    1 cup granulated sugar
    1 None orange, zested, 1/3 cup juice, plus 2 extra oranges, segmented
    2 tbsp all-purpose flour
    5 None eggs
    1/2 cup heavy cream
    6 oz passionfruit pulp
    None None whipped cream, to serve
Preparation
    Preheat oven to 325\u00b0F. Line an 8 inch springform pan with parchment paper.
    In a food processor, process graham crackers to crumbs. Add butter and pulse to combine. Press mixture into base and side of prepared pan. Chill for 30 mins.
    Meanwhile, beat cream cheese, 3/4 cup sugar and orange zest together until smooth. Beat in 3 tbsp orange juice and flour. Add eggs, 1 at a time, beating well after each addition. Beat in cream then transfer to prepared pan and place on a baking tray. Bake for 1 hour 10 mins, until just set in the center. Turn oven off and let cool in oven with door ajar (to prevent cracking). Chill overnight.
    In a saucepan, combine passionfruit pulp with remaining sugar and orange juice. Stir over low heat until sugar dissolves. Simmer for 4-5 mins, until thickened and syrupy. Let cool slightly.
    Arrange orange segments over cheesecake then pour passionfruit syrup over top. Serve with whipped cream.
