Ham And Summer Vegetable Quiche - cooking recipe
Ingredients

2 tbsp olive oil
3 None onions, peeled and sliced
1/2 lb zucchini, sliced
3/4 lb tomatoes, sliced
3 None eggs
1 cup milk
1/2 bunch fresh parsley, chopped + some leaves reserved for garnish
3 sprigs thyme, finely chopped + some leaves reserved for garnish
2/3 lb frozen prepared pastry dough, thawed
1/2 lb cooked ham, cut into strips
Preparation

Preheat the oven to 400\u00b0F. Heat the oil in a frying pan and briefly saute the onions, zucchini and tomatoes. Meanwhile, beat the eggs in a bowl, then mix in the milk, season and add the chopped herbs.
Roll our the pastry dough on a floured work surface into a 10 inch circle. Lift it into a greased and floured loose-base tart pan. Press into the pan, then fill it with the onions, tomatoes, zucchini and ham. Pour in the egg mixture and bake for 45 mins. Remove from the oven and sprinkle with the reserved herbs, then lift out of the pan and serve.
