Croque Madame - cooking recipe

3 tbsp butter
2 tbsp flour
3/4 cup milk
8 None thick slices bread, lightly toasted
2 tbsp Dijon mustard
5 oz sliced ham
1/2 cup grated Cheddar cheese
4 None eggs
None None Salad, to serve
Preparation

Preheat the oven to 400\u00b0F.
For the bechamel sauce, melt butter in small saucepan on medium heat. Stir in flour, cook for 1 min. Remove from heat. Stir in milk. Return to heat. Cook, stirring, until sauce boils and thickens. Season to taste.
Place 4 bread slices on baking pan. Spread evenly with mustard. Top with ham. Spread half the bechamel sauce evenly over the ham. Cover with the remaining bread slices. Top with remaining sauce. Sprinkle with cheese.
Bake for 12-15 mins, until golden.
Meanwhile, heat a lightly greased nonstick skillet on medium heat. Fry eggs for 2-3 mins, until set.
Top each sandwich with an egg. Serve with salad.
