Vegetable Fried Brown Rice - cooking recipe

Ingredients
    2 tsp peanut oil
    3 None eggs, lightly beaten
    1 None red pepper, seeded and finely chopped
    1 bunch broccolini, trimmed and chopped
    5 oz mushrooms, sliced
    1 head bok choy, trimmed and chopped
    3 cups cooked brown rice
    2 tbsp sweet chili sauce
    1 tbsp hoisin sauce
    1 tbsp soy sauce
    1 tsp sesame oil
    None None Sliced green onion and chili pepper, to serve
Preparation
    Heat 1 tsp of the peanut oil in a wok or large skillet on high heat. Add eggs, swirling to cover bottom. Cook for 1-2 mins, until just set. Turn and cook further 1 min. Remove from wok and roll up tightly. Slice thinly.
    Heat remaining 1 tsp oil in wok on high heat. Stir-fry pepper and broccolini for 2 mins, until tender. Add mushrooms and bok choy. Stir- fry for 1 min.
    Add brown rice to wok with sweet chili sauce, hoisin sauce, soy sauce and sesame oil. Stir-fry for 1-2 mins until heated through. Serve topped with omelet, green onion and chili pepper.
