Crumpets With Whipped Maple Butter - cooking recipe

Ingredients
    2 1/2 cups flour
    1 tbsp baking powder
    3/4 tsp sugar
    1 pkg (1/4 oz) active dry yeast
    8 tbsp (1 stick) butter, at room temperature
    1/3 cup maple syrup, plus extra to drizzle (optional)
    None None Strawberries, halved, to serve
Preparation
    Sift the flour, baking powder and a pinch of salt into a large bowl. Stir in the sugar. Sprinkle yeast over 1/2 cup lukewarm water in a small bowl. Let stand for 5 mins until bubbles begin to form.
    Add the yeast mixture to the flour mixture. Beat with an electric mixer until smooth.
    Heat a lightly greased skillet on medium heat. Place 4 lightly greased egg rings in the pan. Once heated, fill each ring 3/4 full with the batter.
    Cook the crumpets on a low heat for 12-15 mins or until the surface is filled with holes. Remove the egg rings and turn over the crumpets to cook the other side for 1-2 mins or until golden. Set aside and keep warm. Repeat with the remaining batter.
    For the whipped maple butter, beat the butter in a medium bowl with an electric mixer for 2-3 mins or until pale and creamy. Beat in the maple syrup until well combined. Spread the maple butter over warm crumpets and drizzle with extra maple syrup, if desired. Serve with strawberries.
