Lemon Meringue Kisses - cooking recipe

Ingredients
    6 tbsp (3/4 stick) unsalted butter, chopped
    1 None egg, lightly beaten
    3/4 cup granulated sugar
    1/2 tsp finely grated lemon peel
    2 tbsp plus 1 tsp lemon juice
    2 None egg whites
    None None Powdered sugar, for dusting (optional)
Preparation
    For the lemon curd, combine butter, egg, 1/4 cup of the granulated sugar, lemon peel and 2 tbsp lemon juice in small, heatproof bowl. Stir over a small saucepan of simmering water for 10 mins, or until mixture coats the back of a spoon. Refrigerate for 3 hours or overnight.
    Preheat the oven to 250\u00b0F. Grease 2 baking pans and line with parchment paper.
    For the meringues, beat egg whites and remaining 1/2 cup sugar and 1 tsp lemon juice in a medium bowl with electric mixer for 15 mins, or until sugar has dissolved.
    Spoon mixture into piping bag fitted with 3/4-inch star tip. Pipe 1 1/2-inch stars onto prepared pans, placing then 1 inch apart.
    Bake for 1 hour. Cool completely on pans on wire rack.
    Sandwich meringues with lemon curd and dust with sifted powdered sugar before serving, if desired.
