Spiced Christmas Cookies - cooking recipe

Ingredients
    1 2/3 cups all-purpose flour
    2/3 cup dark brown sugar
    2 tsp ground ginger
    1 tsp pumpkin pie spice
    1/4 tsp ground cloves
    12 tbsp butter, chopped
    1 None egg, separated
    1 tsp powdered gelatin, bloomed in 1 tbsp cold water for 5 mins
    1/3 cup strawberry or raspberry jam, strained
    1 1/2 cups powdered sugar
    1/2 tsp lemon juice
Preparation
    In a food processor, combine flour, brown sugar, spices and butter. Process until combined. Add egg yolk and process. Knead dough on floured surface until smooth. Cover and chill for 30 mins.
    Divide dough into 4 equal pieces. Roll each piece out until 1/8 inch thick. Chill for 30 mins.
    Preheat oven to 350\u00b0F. Line 3 baking trays with parchment paper.
    Cut 30 - 2 1/2 inch squares from dough. Cut shapes from the center of 15 squares (such as letters and snowflakes). Place cookies on prepared trays and bake for 10 mins, until golden brown. Let cool on trays.
    Combine bloomed gelatin with 2 tbsp jam. Gently heat until gelatin melts then mix with remaining jam. Flip over full square cookies. Spread 1 tsp jam over each. Sandwich together with cut-out cookies.
    To finish, whisk egg white until frothy. Gradually beat in powdered sugar until combined. Add lemon juice. Transfer to a piping bag and drizzle over 1/2 of the cookies. Allow to set.
