Tuna And Tomato Frittata - cooking recipe

Ingredients
    1 (15 oz) can tuna in oil, drained, flaked
    1 (15 oz) can whole potatoes, drained, sliced
    1 (10 oz) jar sun-dried tomatoes, drained, sliced
    2.5 oz roasted marinated red pepper strips, drained
    1/2 cup fresh flat-leaf parsley, coarsely chopped, plus 2 tbsp extra
    3 oz Cheddar cheese, grated
    6 None eggs, at room temperature
    1/2 cup 2% milk
    None None mixed greens, to serve
Preparation
    Grease a large nonstick frying pan. Combine tuna, potatoes, tomatoes, pepper strips, parsley and cheese. Whisk together eggs and milk then add to tuna mixture. Transfer to prepared pan, cover with foil and cook over medium heat for 30-35 mins, or until just set. Let cool for 5 mins then sprinkle with extra parsley.
    Serve sliced with mixed greens.
