Asian Steak With Noodles - cooking recipe

Ingredients
    3 tbsp sunflower oil
    2 None beef steaks (about 2/3 lb in total)
    1 lb shiitake mushrooms, halved
    2/3 cup chicken stock
    1 tbsp ginger, peeled and finely grated
    1/2 cup soy sauce
    4 tbsp mirin (Japanese rice wine)
    2 tbsp miso paste
    1 lb ramen noodles
    1 bunch radishes, sliced
    1 bunch spring onions, sliced
    1 tbsp sesame seeds
    1/2 cup fresh cilantro leaves
Preparation
    Heat 2 tbsp of the oil in a large pan. Season the steaks and fry for about 4 mins, turning so they are browned on both sides. Remove from the pan and wrap in foil to keep warm.
    Meanwhile, add the rest of the oil to the same pan, and saute the mushrooms for 5 mins. Add the ginger, the stock, the soy sauce and the rice wine. Bring to a boil and simmer until the liquid has reduced by a third of its original volume. Stir in the miso paste.
    Cook the noodles in a saucepan according to the package instructions, excluding any seasonings that were included, then drain. Cut the steak into thin strips. Add the steak, radishes, spring onions, noodles and sesame seeds to the mushroom sauce and stir. Spoon into a serving bowl and sprinkle with the cilantro.
