Kale Stew With Spaetzle - cooking recipe

Ingredients
    1 bunch mixed herbs
    5 None allspice berries
    5 None peppercorns
    1 None bay leaf
    500 g smoked ham
    1-2 tbsp oil
    3 None onions, peeled and sliced
    125 ml apple juice
    1 kg kale, roughly chopped
    150 g spaetzle
Preparation
    Bring 6 cups of water to a boil, add the herbs, spices and ham and simmer for about 1 hour over a low heat.
    Heat oil in a separate pan and saute the onions for about 4 minutes. Deglaze the pan with apple juice and bring to a boil.
    Remove the meat and set aside. Strain the liquid into another pot, add the kale and onions and simmer for another 1 hour.
    Cut the meat up into pieces and add back to the pan. Cook the spaetzle for about 16 minutes in boiling salted water then drain and add to the stew. Season to taste with salt and pepper and serve.
