Caramelized Pepper Pork - cooking recipe

Ingredients
    3 None shallots, finely chopped
    2 cloves garlic, crushed
    2 tbsp fish sauce
    1 tbsp coarsely cracked black pepper
    1 3/4 lbs boneless pork belly, rind removed, cubed
    1 tbsp peanut oil
    2 tbsp dark brown sugar
    2 None green onions, thinly sliced
Preparation
    Combine shallot, garlic, fish sauce, pepper and pork in large bowl.
    Heat oil in 6-quart pressure cooker. Cook pork, in batches, until browned.
    Return all pork to cooker with sugar; cook, stirring, until sugar caramelizes. Add 1/3 cup water; secure lid. Bring cooker to high pressure. Reduce heat to stabilize pressure; cook 20 mins.
    Release pressure using the quick release method; remove lid. Serve sprinkled with onion.
