Roasted Chicken And Tomatoes - cooking recipe
Ingredients

1 None chicken (about 3 lbs), cut along the breast bone and flattened out
1/2 tsp sweet paprika
6 sprigs fresh thyme, little reserved for garnish, remainder chopped
1 clove garlic, peeled and minced
2 2/3 lbs mixed tomatoes
Preparation

Preheat the oven to 400\u00b0F. Grease a roasting pan. Season the skin side of the chicken with salt, black pepper and paprika and rub the thyme and garlic on the inside.
Place the chicken skin-side up in the pan and roast for 1 hour. Arrange the tomatoes around the chicken and roast for 30 mins. Remove from the oven and garnish with thyme.
