Lime Herb Orzo - cooking recipe
Ingredients

2 tbsp olive oil
1 None large shallot, chopped
8 oz orzo
2 cups chicken stock
1 None lime, zested and juiced
1/2 cup dried cranberries
1 tbsp chopped fresh parsley leaves
1 tsp chopped fresh thyme leaves
1/2 cup sliced almonds
Preparation

In a small saucepan, heat oil over medium heat. Cook shallot until softened. Add orzo, chicken stock and 1/2 cup water. Bring to a boil then reduce heat, cover and cook for 10 mins, or until liquid is absorbed.
Transfer to a serving bowl and toss with 1 tsp lime zest, 2 tsp lime juice, cranberries and herbs. Season. Fold in almonds before serving.
