Ricotta And Grilled Vegetable Sandwiches - cooking recipe

Ingredients
    None None Cooking oil spray
    2 None zucchini, sliced lengthways
    1 None small eggplant, thinly sliced lengthways
    7 oz ricotta
    2 tbsp chives, finely chopped
    4 None crusty rolls, halved
    None None Mixed greens, to serve
Preparation
    Spray a grill pan with cooking oil spray and heat on high. Cook zucchini and eggplant for 3 mins each side, until golden and tender. Set vegetables aside to cool.
    Combine ricotta and chives in a bowl. Season to taste.
    Spread roll bottoms with ricotta mixture. Top with vegetables, mixed greens and roll tops.
