Mocha Chocolate Soufflés - cooking recipe

Ingredients
    2 tbsp butter, plus extra, melted, for brushing
    1/3 cup sugar, 1/2 tbsp reserved for dusting
    2 oz dark chocolate
    1 tbsp dark cocoa powder, plus extra to dust
    1 tbsp instant coffee granules
    2 None large eggs, separated
    1 tbsp Cointreau
    None None Ice cream, to serve
Preparation
    Preheat oven to 400\u00b0F. Brush a two 1-cup ramekins with melted butter and dust with sugar. Place on a baking sheet.
    Combine butter and chocolate in a heatproof bowl. Place over a saucepan of gently simmering water, stirring until melted. Mix in sugar, cocoa and coffee granules, stirring until dissolved. Remove from heat and cool slightly. Whisk in egg yolks and Cointreau.
    In a medium bowl, beat egg whites until soft peaks form. Lightly fold into chocolate mixture.
    Spoon mixture into ramekins. Level off tops with a flat palette knife. Run a finger around inside rim of cups to clean. Bake for 15-20 mins, until risen and just set in center. Dust souffles with cocoa and serve with ice cream.
