Mixed Fruit, Ricotta And Almond Parcels - cooking recipe

Ingredients
    12 sheets frozen filo dough, thawed
    10.5 oz low-fat ricotta cheese
    2 tbsp brown sugar
    1 (13.5 oz) can fruit cocktail, drained
    5 oz almond biscotti, crushed
    2 tsp cinnamon sugar
    None None plain yogurt, to serve
Preparation
    Preheat oven to 425\u00b0F. Lightly grease and line 2 baking trays with parchment paper.
    Working with 1 sheet of filo dough at a time, lay flat on a clean, dry work surface. Lightly coat with oil. Top with a second sheet of filo dough and lightly coat with oil. Repeat process until you have 4 layers. Make 2 more stacks with remaining filo dough then halve each stack down the center.
    In a small bowl, combine ricotta and brown sugar. Distribute between filo squares, leaving a 3/4 inch border. Divide fruit cocktail and biscotti between each parcel. Gather corners of filo squares together to enclose filling, forming a money bag shape. Arrange on prepared trays. Lightly coat with oil and sprinkle with cinnamon sugar. Bake for 15-20 mins, until golden brown.
    Serve warm with yogurt.
