Ingredients

8.5 oz graham crackers, 6.5 oz processed to fine crumbs, remainder roughly chopped
1/2 cup sweetened condensed milk
7 tbsp unsalted butter, chopped
1 tsp lime zest
1 tbsp lime juice
1/2 cup desiccated coconut

2 cups powdered sugar
1 tbsp unsalted butter, melted
2 tbsp lime juice
Preparation

Grease an 8x12 inch rimmed baking tray. Line base and sides with parchment paper, extending paper 2 inches over sides.
Stir graham cracker crumbs, sweetened condensed milk and butter in a small saucepan over medium heat until smooth. Add roughly chopped cookies, lime zest, lime juice and coconut. Press firmly into base of prepared pan and chill for 30 mins, or until firm.
Meanwhile, to make the lime icing, sift powdered sugar into a small heatproof bowl. Stir in butter, lime juice and enough water to make a thick paste. Place bowl over a small saucepan of simmering water and stir until spreadable.
Spread icing over lime and coconut bars and chill for 30 mins, or until firm.
