Mushrooms Stuffed With Goat Cheese And Pine Nuts - cooking recipe

Ingredients
    25 g breadcrumbs
    2 sprigs thyme, leaves picked and chopped
    20 g pine nuts
    200 g creamy goat's cheese
    40 g pitted black olives, chopped
    2 sprigs parsley, finely chopped, plus extra leaves to garnish
    3 tbsp olive oil
    4 None portobello mushrooms, cleaned and stalk removed
Preparation
    Preheat oven to 425\u00b0F. Combine breadcrumbs and thyme. Set aside.
    Combine goat cheese, olives, pine nuts and parsley. Season. Set aside.
    Heat olive oil in a frying pan. Saute mushrooms for 5 mins, turning once. Place on a baking tray, stem-side up. Fill with goat cheese mixture. Sprinkle with breadcrumbs and bake for 5-6 mins. Garnish with parsley.
