Fish And Mussels In Sparkling Wine - cooking recipe

Ingredients
    2 tbsp extra virgin olive oil
    1 1/2 lb black mussels, cleaned
    1 1/4 lb firm white fish fillet, cut into 4 pieces
    1/2 cup sparkling dry white wine
    1 None large tomato, peeled and coarsely chopped
    2 tbsp fresh flat-leaf parsley, chopped
    4 cloves garlic, finely chopped
    1/4 tsp chili flakes
    None None crusty bread, to serve
Preparation
    Bring 2 cups water and oil to a boil. Simmer for 1 min then add remaining ingredients (except crusty bread). Season to taste then bring to a boil again. Reduce heat to low and simmer, covered, for 12-15 mins. Carefully transfer fish to serving bowls. Discard any unopened mussels then spoon mussels and liquid over fish. Serve with crusty bread.
