Feta And Roasted Red Pepper Canapés With Salsa - cooking recipe

1 x 15 oz jar roasted red peppers, drained, 3.5 oz diced
7 oz feta cheese
4 slices whole wheat bread
1/3 cup flat leaf parsley, 1/4 finely chopped
12 thin slices smoked ham, halved lengthways
4 None tomatoes, cored and finely diced
1 tbsp + 1 tsp olive oil
Preparation

Cut the whole peppers into 24 equally sized rectangles (1 x 2 inches). Cut the feta and bread into rectangles of the same size.
Lay the cheese pieces on top of the bread, then top with the whole parsley leaves, then the pepper pieces. Wrap a half slice ham around each.
For the salsa, combine the tomatoes, diced peppers and chopped parsley. Stir in 1 tbsp oil and season to taste.
Heat 1 tsp oil in a non-stick frying pan and fry the canapes over a medium heat for 2 mins, turning. Remove from the pan and drain on paper towels. Serve with the salsa.
