Salami And Pesto Pizza Muffins - cooking recipe

Ingredients
    4 None whole wheat English muffins, split
    1/2 cup basil pesto
    1 None green pepper, seeded and finely chopped
    16 None very thin slices salami
    1/3 cup pitted kalamata olives, sliced
    1 1/4 cups grated mozzarella cheese
    None None Salad leaves, to serve
Preparation
    Preheat the broiler on high. Place the muffins on a baking pan. Broil until lightly toasted on both sides.
    Spread the cut side of the muffins with pesto. Top with the pepper, salami, olives and mozzarella. Broil for 3 mins or until golden and the cheese melts. Serve with salad leaves.
