Walnut And Blue Cheese Calabresi - cooking recipe
Ingredients

18 oz filei calabresi pasta or short to medium pasta of choice
1 slice white bread, crust removed
1/2 cup milk
1 cup walnuts
1 oz finely grated Parmesan cheese
1/4 cup extra virgin olive oil
1/2 bunch fresh chives
1 handful fresh parsley leaves
3.5 oz mild blue cheese, crumbled
Preparation

Preheat broiler. Cook pasta in boiling salted water until al dente. Drain, reserving 1/3 cup pasta water.
Meanwhile, soak bread in milk until absorbed. Place walnuts on a baking tray and toast in oven for 5-7 mins, until fragrant, tossing occasionally. Remove from oven. Transfer most of the walnuts to a blender along with bread and most of the Parmesan. Blitz until chunky. With the motor running, drizzle in olive oil to emulsify. Add reserved pasta water, chives and parsley. Pulse to combine and season. Chop remaining walnuts and stir through pasta along with sauce.
Spoon pasta into serving bowls. Top with remaining Parmesan and crumbled blue cheese.
