Chili Fried Rice With Chicken And Broccolini - cooking recipe

Ingredients
    1 tbsp peanut oil
    3 None eggs, lightly beaten
    1 medium onion, thinly sliced
    1 clove garlic, crushed
    2 None fresh long red chili peppers, thinly sliced
    6 oz broccolini, chopped coarsely
    2 cups shredded roast chicken
    3 cups cooked white rice
    1 tbsp light soy sauce
    1 tbsp hoisin sauce
Preparation
    Heat 1 tsp of the oil in wok on high heat. Add half the egg, swirling wok to make a thin omelet. Remove omelet from wok. Roll up then cut into thin strips. Repeat process using another 1 tsp of the oil and remaining egg.
    Heat remaining 1 tsp oil in wok on high heat. Stir-fry onion, garlic and chili pepper until onion softens. Add broccolini; stir-fry until tender.
    Add remaining ingredients to wok; stir-fry until heated through. Add omelet; toss gently.
