Stir Fried Green Vegetables With Rice Noodles - cooking recipe

Ingredients
    2 tbsp sesame seeds
    100 g rice noodles
    2-3 tbsp olive oil
    450 g broccoli, chopped
    500 g asparagus, woody end removed and chopped
    1 bunch spring onions, sliced
    1.5 cm fresh ginger, finely diced
    2 cloves garlic, finely diced
    2 None pak-choi, leaves seperated
    1 None chilli, finely sliced
    125 ml teriyaki sauce
    1 tbsp sesame seed oil
    1 bunch fresh coriander, stalks removed
Preparation
    Simmer the noodles in a pot of boiling water for 4-5 mins. Strain, rinse with cold water then cut into 2 inch pieces.
    For the stir fry, heat the oil in a wok over high heat until it starts smoking. Add the broccoli and stir-fry for 2-3 mins, stirring. Add the asparagus, spring onions, ginger, and garlic and stir-fry for an additional 3 mins. Add the pak choi, chili and teriyaki sauce and cook for another 1-2 mins then add the noodles.
    To serve, mix the sesame seed oil and cilantro together. Place the stir fry in a bowl, drizzle with the dressing then sprinkle with the toasted sesame seeds.
