Tuna, Beet And Bean Salad - cooking recipe

Ingredients
    1 1/2 tbsp butter
    1/4 cup olive oil, plus 1 tbsp
    4 slices bread, crust removed, cut into cubes
    5 oz mixed greens
    1 (15 oz) jar baby beets, drained, halved
    1 (15 oz) can tuna, drained, flaked
    1 (13.5 oz) can cannellini beans, drained, rinsed
    2 1/2 oz semi-dried tomatoes, halved
    1 tbsp lemon juice
    1 tbsp chopped fresh chives
    2 tsp Dijon mustard
Preparation
    Heat butter and 1 tbsp oil in a large frying pan over medium heat. Cook bread for 4-5 mins, turning, until crisp and golden. Drain on paper towels.
    Meanwhile, in a large bowl, combine salad, beets, tuna, beans and tomatoes. Whisk together lemon juice, chives, mustard and remaining oil. Season to taste. Drizzle over salad just before serving.
