Grilled Steak And Vegetables With Gremolata - cooking recipe

Ingredients
    2 tsp olive oil
    2 tsp lemon juice
    6 oz red onion, peeled and cut into thin wedges
    13 oz zucchini, sliced lengthways
    1 lb sweet potato, peeled and sliced thinly
    4 None sirloin steaks, fat trimmed
    1/4 bunch flat-leaf parsley, finely chopped
    2 tsp finely grated lemon rind
    1 clove garlic, crushed
Preparation
    Mix the oil, lemon juice, onion, zucchini and sweet potato in a large bowl and season to taste, tossing to combine. Cook the vegetables on a heated, oiled grill pan or barbecue grill until browned and tender, then transfer to a large plate or dish and cover to keep warm.
    Cook the steaks on a heated, oiled grill pan or barbecue grill until browned on both sides and cooked as desired.
    To make the gremolata, combine the parsley, lemon and garlic all in a small bowl.
    Sprinkle the grilled vegetables with gremolata and serve with the steaks.
