Sausage And Tomato Penne - cooking recipe
Ingredients

1 lb penne pasta
1 tbsp olive oil
1 None red pepper, seeded and thinly sliced
1 None onion, sliced
2 cloves garlic, crushed
1 None fresh chili pepper, seeded and chopped
1 None (14 oz) kielbasa sausage, thickly sliced
1 can (14 oz) diced tomatoes
1/2 cup white wine, vegetable stock or water
1/4 cup pitted black olives
2 oz baby spinach leaves
3/4 cup crumbled feta cheese
None None Garlic bread, to serve
Preparation

Cook the pasta in a large saucepan of boiling salted water according to package directions. Drain well and return to the pan.
Meanwhile, heat the oil in a large skillet on medium heat. Add the pepper, onion, garlic and chili pepper and saute for 4-5 mins until softened.
Add the sausage and cook, stirring, for 2-3 mins until lightly browned. Add the tomatoes, wine and olives and cook for 4-5 mins, stirring occasionally. Remove from heat. Stir in the spinach.
Add the sauce to the pasta and toss to combine. Season to taste. Top with crumbled feta. Serve with garlic bread.
