Apricot And Pistachio Scones - cooking recipe
Ingredients

1 3/4 cups self-rising flour, sifted
2 1/4 cups rolled oats
1/4 cup granulated sugar
3 1/2 tbsp butter, diced
1 1/4 cups dried apricots, coarsely chopped
1/4 cup pistachios, coarsely chopped
1 cup milk
None None heavy cream, to serve (optional)
Preparation

Preheat oven to 425\u00b0F. Lightly grease and flour a baking tray. Combine flour, oats, sugar and 1/2 tsp salt. Cut in butter until mixture resembles breadcrumbs. Fold in apricots and pistachios. Add milk and mix until soft and sticky. Turn dough out onto a floured surface and knead lightly.
Press into a 6 inch disc. Cut into rounds using a floured round cutter. Transfer to prepared tray and bake for 25 mins, until golden brown. Cool slightly on a wire rack.
Serve warm with cream, if desired.
