Ham And Cheese-Stuffed Puff Pastry - cooking recipe

Ingredients
    2 tbsp olive oil
    1/2 lb zucchini, trimmed and thinly sliced
    1 lb puff pastry, thawed if frozen
    1 None egg, beaten
    2 tbsp Dijon mustard
    1 oz ham, very thinly sliced
    1/2 lb Gruyere cheese, grated
Preparation
    Heat the oil in a frying pan and saute the zucchini over medium heat for 5-6 mins until softened. Season and set aside to cool.
    Preheat the oven to 425\u00b0F. On a lightly floured surface, roll out 1/2 the puff pastry dough into an 8 x 12 inch rectangle. Place on a large baking sheet lined with parchment paper. Brush around the edge of the dough with beaten egg. Spread the mustard over the dough then top with the ham, sauteed zucchini and cheese.
    Roll the remaining dough out into a rectangle slightly larger than the first and drape over the filling. Crimp the edges to seal. Make 2-3 slits in the top of the dough to allow the steam to escape. Brush the top with the remaining beaten egg. Bake for 15-20 mins until dark golden brown. Serve warm or cold.
