Penne With Bacon And Radicchio - cooking recipe

Ingredients
    200 g penne pasta
    2 tbsp pine nuts
    3 tbsp olive oil
    50 g smoked bacon, diced
    2 None shallots, peeled and finely diced
    1 small clove garlic, peeled and finely diced
    1 head radicchio, cut into thin strips
    1 None small orange, juiced, plus grated zest of 1/2
    2 tbsp black olives
    1 tbsp capers
    4 sprigs fresh basil, leaves stripped from stems
    30 g Parmesan, grated
Preparation
    Cook pasta in boiling salted water according to package instructions. Drain and reserve 1/4 cup pasta water.
    Meanwhile, heat oil in the pan and fry bacon, shallots and garlic for 2 mins. Add radicchio and cook over medium heat for 3-4 mins. Add reserved pasta water, orange juice, olives, capers and pine nuts and bring to a boil. Toss with pasta, basil, and Parmesan cheese. Season and serve garnished with orange zest.
