Spiced Honey Roll Cake - cooking recipe

4 None eggs, separated
1/2 cup sugar, plus more
1/2 cup cornstarch
2 tbsp all-purpose flour
2 tsp baking powder
1 tsp pumpkin- or apple-pie spice
1/2 tsp nutmeg
1 tbsp honey, warmed

1 cup heavy cream
1 tsp brandy
1 tbsp honey
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line a 9 x 13-inch jelly roll pan.
In a bowl, using an electric mixer, beat egg whites until stiff peaks form. Gradually add sugar until thick and glossy (this takes about 6-8 minutes). Beat in egg yolks until combined.
Meanwhile, sift flour, cornstarch, and spices together. Lightly fold flour mixture and honey into egg mixture until combined.
Spread evenly into pan. Bake 15-20 minutes, until firm when touched. Spread a clean tea towel on a work surface, cover with parchment and sprinkle with extra sugar. Turn cake out onto this. Trim edges and roll up with parchment and towel immediately, starting from short side. Allow to cool completely on a wire rack
For the filling: In a bowl, using an electric mixer, beat all ingredients together until thick.
Unroll cooled cake (removing tea towel and paper). Spread with filling then roll back up into shape. Chill until ready to serve.
